  • 1 ½ pounds ground meat (beef, pork, turkey, or sausage)
  • 1 teaspoon fennel seed

  • ¼ cup extra-virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 2 tablespoons pressed or grated garlic (from 34 cloves)
  • ½1 teaspoon crushed red chili pepper (to taste)
  • 1 teaspoon dried oregano
  • ¼ cup dry red wine (optional)
  • 1 28-ounce can crushed tomatoes
  • 2 tablespoons tomato paste

For the Pasta:

  • 1 pound dried spaghetti
  • 3 tablespoons salt (for boiling water)

For Garnish:

  • ¼ cup chopped Italian parsley
  • Freshly grated Parmesan or Pecorino Romano cheese

Instructions

  1. In a bowl, season the ground meat with salt, pepper, and fennel seed. Mix well.
  2. Heat olive oil in a large pan over medium heat. Add onions and sauté until softened. Stir in garlic, chili flakes, and oregano.
  3. Add the meat and cook until browned. Break it into small pieces with a wooden spoon.
  4. Pour in the red wine and let it simmer for 10 seconds. Scrape any browned bits off the pan.
  5. Stir in the crushed tomatoes, tomato paste, and additional salt. Simmer on medium-low heat for 15–20 minutes, stirring occasionally.
  6. Meanwhile, cook the spaghetti in salted boiling water until al dente. Drain well.
  7. Toss the pasta with the sauce until coated.
  8. Serve with parsley and grated cheese on top.
