For the Meat Sauce:
- 1 ½ pounds ground meat (beef, pork, turkey, or sausage)
- 1 teaspoon fennel seed
- Kosher salt to taste (approx. 1 ½ tsp)
- Freshly ground black pepper to taste
- ¼ cup extra-virgin olive oil
- 1 medium yellow onion, finely chopped
- 2 tablespoons pressed or grated garlic (from 3–4 cloves)
- ½–1 teaspoon crushed red chili pepper (to taste)
- 1 teaspoon dried oregano
- ¼ cup dry red wine (optional)
- 1 28-ounce can crushed tomatoes
- 2 tablespoons tomato paste
For the Pasta:
- 1 pound dried spaghetti
- 3 tablespoons salt (for boiling water)
For Garnish:
- ¼ cup chopped Italian parsley
- Freshly grated Parmesan or Pecorino Romano cheese
Instructions
- In a bowl, season the ground meat with salt, pepper, and fennel seed. Mix well.
- Heat olive oil in a large pan over medium heat. Add onions and sauté until softened. Stir in garlic, chili flakes, and oregano.
- Add the meat and cook until browned. Break it into small pieces with a wooden spoon.
- Pour in the red wine and let it simmer for 10 seconds. Scrape any browned bits off the pan.
- Stir in the crushed tomatoes, tomato paste, and additional salt. Simmer on medium-low heat for 15–20 minutes, stirring occasionally.
- Meanwhile, cook the spaghetti in salted boiling water until al dente. Drain well.
- Toss the pasta with the sauce until coated.
- Serve with parsley and grated cheese on top.

- Substitute red wine with balsamic vinegar for a tangy flavor.
- Store sauce separately from pasta to maintain texture.
