For the Dough

  • 2 ½ teaspoons active dry yeast (see notes for instant yeast substitution)
  • 1 tablespoon honey
  • 1 ¼ cups whole milk (warmed to 95-110°F)
  • 2 large eggs (room temperature)
  • 2 teaspoons pure vanilla extract
  • 6 tablespoons melted butter
  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • Canola oil (for frying)

For the Cinnamon Sugar Coating

  • 1 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl or the bowl of a stand mixer, combine warm milk, honey, and yeast. Stir and let sit for 10 minutes until foamy.
  2. Add flour, salt, eggs, vanilla extract, and melted butter to the bowl.
  3. Using a dough hook attachment (or kneading by hand), mix until the dough is smooth and elastic (about 5 minutes).
  4. If the dough is too sticky, add 1 tablespoon of flour at a time until it comes together.
  5. Cover the bowl with plastic wrap and let the dough rise in a warm place for 1 hour, or until doubled in size.

Step 2: Shape the Donuts

  1. Lightly flour a work surface and roll out the dough to ½ inch thickness.
  2. Using heart-shaped cookie cutters, cut out as many donuts as possible.
  3. Re-roll excess dough and continue cutting until all dough is used.
  4. Place the shaped dough on parchment-lined baking sheets, cover with plastic wrap, and let rest for 10-15 minutes while you heat the oil.

Step 3: Fry the Donuts

  1. In a deep fryer or large pot, heat 3 inches of oil to 350°F using a cooking thermometer.
  2. Carefully place 4 donuts at a time into the hot oil.
  3. Fry for about 2 minutes per side, flipping once, until golden brown.
  4. Use a slotted spoon to remove and transfer to a wire rack to cool slightly.

Step 4: Coat in Cinnamon Sugar

  1. In a large bowl, combine granulated sugar and cinnamon.
  2. While the donuts are still warm, roll them in the cinnamon sugar mixture to evenly coat.

Notes
