Wet Ingredients:

  • ⅓ cup melted coconut oil or extra-virgin olive oil
  • ½ cup honey or maple syrup
  • 2 eggs (or flax eggs for vegan)
  • ½ cup milk of choice or water
  • 2 teaspoons vanilla extract

Dry Ingredients:

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • ¼ teaspoon ground nutmeg
  • 1 ¾ cups white whole wheat flour or regular whole wheat flour

Zucchini & Add-Ins:

  • 1 ½ cups grated zucchini (squeeze out excess moisture)
  • ¾ cup chopped walnuts or pecans (optional)
  • ½ cup chocolate chips or dried fruit (optional)

Instructions

Step 1: Preheat & Prepare

  1. Preheat oven to 325°F and grease a 9×5-inch loaf pan.
  2. If using nuts, toast them on a baking sheet for 5 minutes.

Step 2: Mix the Wet Ingredients

  1. In a large bowl, whisk together melted coconut oil and honey or maple syrup.
  2. Add eggs and whisk until smooth.
  3. Stir in milk, vanilla extract, cinnamon, nutmeg, salt, and baking soda.

Step 3: Add the Zucchini

  1. Grate the zucchini and squeeze out excess liquid using a clean towel.
  2. Stir the zucchini into the wet mixture.

Step 4: Combine with Dry Ingredients

  1. Add whole wheat flour and stir gently until just combined.
  2. Fold in nuts, chocolate chips, or dried fruit if using.

Step 5: Bake & Cool

  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack.
