Wet Ingredients:
- ⅓ cup melted coconut oil or extra-virgin olive oil
- ½ cup honey or maple syrup
- 2 eggs (or flax eggs for vegan)
- ½ cup milk of choice or water
- 2 teaspoons vanilla extract
Dry Ingredients:
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon fine sea salt
- ¼ teaspoon ground nutmeg
- 1 ¾ cups white whole wheat flour or regular whole wheat flour
Zucchini & Add-Ins:
- 1 ½ cups grated zucchini (squeeze out excess moisture)
- ¾ cup chopped walnuts or pecans (optional)
- ½ cup chocolate chips or dried fruit (optional)
Instructions
Step 1: Preheat & Prepare
- Preheat oven to 325°F and grease a 9×5-inch loaf pan.
- If using nuts, toast them on a baking sheet for 5 minutes.
Step 2: Mix the Wet Ingredients
- In a large bowl, whisk together melted coconut oil and honey or maple syrup.
- Add eggs and whisk until smooth.
- Stir in milk, vanilla extract, cinnamon, nutmeg, salt, and baking soda.
Step 3: Add the Zucchini
- Grate the zucchini and squeeze out excess liquid using a clean towel.
- Stir the zucchini into the wet mixture.
Step 4: Combine with Dry Ingredients
- Add whole wheat flour and stir gently until just combined.
- Fold in nuts, chocolate chips, or dried fruit if using.
Step 5: Bake & Cool
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes, then transfer to a wire rack.
