  • 4 large eggs
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • Optional: chopped green onions
  • Optional: grated carrot
  • Optional: chopped bell pepper

Instructions

  1. In a mixing bowl, whisk eggs with milk and salt until frothy. Stir in vegetables if using.
  2. Heat a non-stick skillet over medium heat and add vegetable oil. Pour a quarter of the egg mixture into the skillet; swirl to cover evenly.
  3. Cook for 2-3 minutes until edges set, then roll from one side to another and push to one side of the skillet.
  4. Add another quarter of the egg mixture to the empty skillet; let cook for one minute before folding the rolled omelette over it. Repeat until all egg mixture is used.
  5. Remove from heat, cool slightly, slice into pieces, and serve warm or at room temperature.
