- 4 boneless skinless chicken breasts
- 4 medium-sized jalapeños
- 8 slices bacon
- 4 ounces cream cheese
- 1 cup shredded cheddar cheese
- 2 tablespoons coconut sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1 ½ teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
- ½ cup BBQ sauce
Instructions
- Preheat your grill to medium heat (350℉ – 375℉).
- In a small bowl, combine the rub ingredients (coconut sugar, garlic powder, onion powder, oregano, chili powder, salt, pepper) and set aside.
- In a medium bowl, mix together softened cream cheese and shredded cheddar with 2 tablespoons of the rub mixture.
- Prepare jalapeños by slicing them in half lengthwise and removing seeds.
- Slice each chicken breast open like a book and pound to an even thickness of about ¼ inch.
- Stuff each chicken breast with half a jalapeño and a portion of the cream cheese mixture; close securely.
- Season both sides with the remaining rub and wrap each breast in two slices of bacon.
