Ingredients
- 1 1/4 pounds boneless skinless chicken breasts
- 5 tablespoons dijon mustard
- 3–4 tablespoons honey
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
- 3 romaine hearts, halved lengthwise
- 6 slices bacon, cooked and crumbled
- 3 hard-boiled eggs, quartered
- 1 avocado, halved
- 1/2 cup cherry tomatoes, halved
- 1/2 cup crumbled blue cheese
Instructions
- In a glass measuring cup, whisk together dijon mustard, honey, lemon juice, olive oil, garlic powder, salt, and pepper.
- Place chicken in a freezer bag with 1/4 cup of the marinade; massage the bag to coat the chicken. Refrigerate for 1-4 hours.
- Preheat grill to medium-high (425°F). Grill chicken for about 5-7 minutes per side until internal temperature reaches 165°F. Let rest before slicing.
- Drizzle romaine and cut avocados with olive oil; season with salt and pepper. Grill romaine cut-side down for about 3 minutes; flip for another 2 minutes. Grill avocado for about 4-6 minutes.
- On a platter, arrange grilled romaine as the base and top with sliced chicken, avocado, bacon, hard-boiled eggs, cherry tomatoes, and blue cheese.
