  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook orzo in boiling salted water until al dente; drain and rinse under cold water.
  2. In a large mixing bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and olives.
  3. Whisk together olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper in a small bowl.
