  • 1.5 pounds skinless, boneless chicken thighs
  • 2 tablespoons olive oil (divided)
  • 8 ounces grape tomatoes
  • 5 cloves garlic
  • 5 ounces fresh spinach
  • 2 cups cooked jasmine rice
  • 15 ounces canned chickpeas
  • 6 ounces feta cheese

Instructions

  1. Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a heavy-bottomed skillet and cook the chicken for about 10 minutes until fully cooked. Remove from skillet.
  2. In the same skillet, add another tablespoon of olive oil along with half of the grape tomatoes, garlic, oregano, and salt; cook until softened. Stir in spinach until wilted.
  3. Add jasmine rice and chickpeas to the skillet; mix well. Pour in lemon juice and remaining tomatoes; heat through for 1-2 minutes.
  4. Combine feta cheese with olive oil, lemon juice, and oregano in a bowl. Mix half into the rice mixture.
  5. Slice chicken and nestle atop the rice; top with remaining feta mixture before serving.
