Ingredients
- 1.5 pounds skinless, boneless chicken thighs
- 2 tablespoons olive oil (divided)
- 8 ounces grape tomatoes
- 5 cloves garlic
- 5 ounces fresh spinach
- 2 cups cooked jasmine rice
- 15 ounces canned chickpeas
- 6 ounces feta cheese
Instructions
- Season chicken thighs with oregano, paprika, salt, and red pepper flakes. Heat olive oil in a heavy-bottomed skillet and cook the chicken for about 10 minutes until fully cooked. Remove from skillet.
- In the same skillet, add another tablespoon of olive oil along with half of the grape tomatoes, garlic, oregano, and salt; cook until softened. Stir in spinach until wilted.
- Add jasmine rice and chickpeas to the skillet; mix well. Pour in lemon juice and remaining tomatoes; heat through for 1-2 minutes.
- Combine feta cheese with olive oil, lemon juice, and oregano in a bowl. Mix half into the rice mixture.
- Slice chicken and nestle atop the rice; top with remaining feta mixture before serving.
