Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, cream together softened butter and brown sugar until light and fluffy.
  4. Beat in egg, vanilla extract, and cooled brewed coffee until well combined.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. Scoop dough onto the prepared baking sheet spaced evenly apart.
  7. Bake for 10-12 minutes until edges are set but centers remain soft.
  8. Allow to cool slightly before transferring to a wire rack.
  9. Drizzle with icing made from powdered sugar and brewed coffee.
