Instructions

  1. In a bowl, whisk together flour, baking soda, ginger, cinnamon, allspice, and salt. In another bowl, cream softened butter with brown sugar until fluffy. Add egg, molasses, and vanilla; mix until combined. Gradually add dry ingredients until a soft dough forms.
  2. Divide dough in half into disks; wrap in plastic wrap and chill for at least 1 hour.
  3. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  4. Roll out one disk on a floured surface to about ¼-inch thickness; cut out ghost shapes using a cookie cutter and place on prepared sheets.
  5. Bake for 8-10 minutes until edges are set but centers remain soft. Cool on sheets for 5 minutes before transferring to wire racks.
  6. Once cooled completely, decorate with royal icing to create ghost faces.
