  • 1 medium lemon
  • 1/2 ounce Parmesan cheese (grated)
  • 1/4 cup pistachios (raw or roasted)
  • 1 packed cup baby spinach
  • 1/2 teaspoon kosher salt
  • 1/2 cup extra-virgin olive oil

Instructions

  1. Trim the ends of the garlic scapes and coarsely chop them.
  2. Zest the lemon to obtain 1 teaspoon, then juice it until you have 2 tablespoons.
  3. In a food processor, combine chopped garlic scapes, pistachios, and spinach. Process until finely chopped.
  4. Scrape down the bowl’s sides and add lemon juice, zest, grated Parmesan cheese, and salt. Process until well mixed.
  5. While blending, slowly add olive oil until fully emulsified.
