Ingredients
- 5 garlic scapes
- 1 medium lemon
- 1/2 ounce Parmesan cheese (grated)
- 1/4 cup pistachios (raw or roasted)
- 1 packed cup baby spinach
- 1/2 teaspoon kosher salt
- 1/2 cup extra-virgin olive oil
Instructions
- Trim the ends of the garlic scapes and coarsely chop them.
- Zest the lemon to obtain 1 teaspoon, then juice it until you have 2 tablespoons.
- In a food processor, combine chopped garlic scapes, pistachios, and spinach. Process until finely chopped.
- Scrape down the bowl’s sides and add lemon juice, zest, grated Parmesan cheese, and salt. Process until well mixed.
- While blending, slowly add olive oil until fully emulsified.
