For the Sauce:

  • ¼ cup oyster sauce
  • ¼ cup chopped red onion
  • 8 cloves garlic, minced
  • 1 ½ cups beef stock
  • 2 tablespoons rice wine vinegar

For the Noodles & Garnish:

  • 8 to 10 ounces thick, hand-pulled noodles, cooked according to package instructions
  • 2 scallions, thinly sliced on the bias

Instructions

Step 1: Cook the Steak

  1. Heat 2 tablespoons vegetable oil in a large pan over medium heat.
  2. Add red bell pepper and steak strips, cooking for 2-3 minutes until warmed through.
  3. Remove the steak and peppers from the pan, leaving the fat behind.

Step 2: Make the Sauce

  1. In the same pan, add ¼ cup granulated sugar and cook until it turns deep brown and begins to smoke (about 30 seconds).
  2. Quickly add:
    • ¼ cup oyster sauce
    • ¼ cup chopped red onion
    • 8 cloves minced garlic
    • 1 ½ cups beef stock
    • 2 tablespoons rice wine vinegar
  3. Stir and cook until the sauce thickens slightly (about 8 minutes).

Step 3: Assemble the Dish

  1. Add the cooked noodles to the sauce and toss to coat evenly.
  2. Return the steak and peppers to the pan and mix well.
  3. Garnish with sliced scallions before serving.
