Description
Garlic Butter Shrimp Scampi Lasagna is a creamy, cheesy seafood delight with layers of tender shrimp, garlic butter sauce, and melted mozzarella.

- ¼ cup butter or margarine
- ½ cup celery, chopped
- ½ cup carrots, chopped
- 2 cloves garlic, finely chopped
- ¼ cup all-purpose flour
- 2 cups half-and-half
- 1 ⅓ cups chicken broth
- Salt and pepper to taste
- 1 egg, slightly beaten
- ½ cup grated Parmesan cheese
- 15 oz ricotta cheese
- 9 no-boil lasagna noodles
- 12 oz SeaPak Shrimp Scampi, cooked
- 1 package SeaPak Popcorn Shrimp, cooked
- 3 cups shredded mozzarella cheese
- 1 teaspoon dried parsley (optional)
Instructions
- Preheat oven to 350°F.
- In a saucepan, melt butter over medium heat. Sauté garlic, carrots, and celery for 5 minutes until soft.
- Stir in flour and cook until bubbly. Gradually add half-and-half and chicken broth, whisking constantly. Bring to a boil and stir for 1 minute. Remove from heat.
- In a bowl, mix egg, Parmesan, and ricotta cheese.
- In a greased 13×9-inch baking dish, spread ¾ cup sauce on the bottom. Top with 3 noodles.
- Add half the shrimp, ¾ cup sauce, and 1 cup mozzarella.
- Add another layer of noodles and spread ricotta mixture over them.
- Repeat layers, finishing with mozzarella and parsley on top.
- Bake covered for 30 minutes, then uncovered for another 10-15 minutes until golden brown.
- Let sit for 15 minutes before slicing. Serve warm.
Notes
- Allow lasagna to rest before cutting to keep layers intact.
- Use fresh shrimp for a more authentic seafood flavor.
- Can be made ahead and refrigerated before baking
