Description

Indulge in the ultimate summer treat with these rich and creamy Fudge Popsicles! Perfect for hot days or whenever you crave something sweet, these homemade pops are sugar-free, low-carb, and packed with chocolatey goodness.


Ingredients

  • 1 cup heavy cream
  • 1 cup unsweetened almond milk (or hemp milk)
  • 1/3 cup Swerve Sweetener
  • 1 tbsp allulose
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 tsp xanthan gum

Instructions

  1. In a medium saucepan over medium-high heat, whisk together heavy cream, almond milk, Swerve sweetener, and cocoa powder. Bring to a boil while stirring frequently for about one minute.
  2. Remove from heat and stir in vanilla extract. Sprinkle xanthan gum over the surface and whisk until well combined. Allow to cool for at least 10 minutes.
  3. Pour the mixture into popsicle molds and freeze for one hour. Afterward, insert sticks two-thirds of the way into each pop and freeze until solid (at least five hours or overnight).
  4. To unmold, run warm water over the outside of each mold for about 5-10 seconds and gently pull on the stick.
