  • 3 cups assorted sliced fresh fruit

Instructions

  1. Prepare the Cookie Dough: In a bowl, whisk flour, cornstarch, baking powder, and salt. In another bowl, beat butter and sugar until creamy. Mix in egg and vanilla extract. Gradually add dry mixture until combined. Chill dough for at least 20 minutes.
  2. Bake the Cookie Crust: Preheat oven to 350°F (177°C). Grease a pizza pan and press dough into a circle. Bake for 17–19 minutes until lightly browned. Cool completely.
  3. Make the Frosting: Beat softened cream cheese and butter until smooth; gradually add confectioners’ sugar and vanilla extract.
  4. Assemble: Spread frosting over cooled crust and arrange fresh fruit on top.
  5. Serve chilled; store leftovers in the fridge for up to three days.
