Ingredients

Scale
  • 4 large yellow onions
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 8 cups beef broth
  • 1 cup dry white wine (optional)
  • 1 tablespoon fresh thyme leaves
  • 1 bay leaf
  • 1 teaspoon black pepper
  • 1 French baguette, sliced into 1-inch thick pieces
  • 2 cups Gruyère cheese, shredded
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Caramelize the Onions: In a large pot, melt butter and olive oil over medium heat. Add sliced onions, salt, and sugar, cooking while stirring until golden brown (30-40 minutes).
  2. Add Garlic and Broth: Stir in minced garlic for one minute. Pour in wine (if using) and scrape any bits from the pot. Add beef broth, thyme, bay leaf, and black pepper. Simmer for 20-30 minutes.
  3. Prepare Bread: Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and toast until golden brown (5-7 minutes).
  4. Assemble the Soup: Remove bay leaf from soup. Ladle hot soup into oven-safe bowls, top with toasted bread and shredded cheese.
  5. Broil and Serve: Place bowls on a baking sheet and broil for 3-5 minutes until cheese is bubbly and golden. Garnish with fresh parsley before serving.
