Description

Fireworks Cupcakes are a delightful way to add a splash of color and flavor to your 4th of July celebrations or any summer gathering. These vibrant, layered cupcakes boast a fluffy vanilla cake base infused with red and blue gelatin for an eye-catching appeal. Ingredients

  • 1/2 cup Butter (room temperature)
  • 2 cups Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Large Eggs
  • 1 1/4 cup Milk
  • 2 3/4 cups All-Purpose Flour
  • 2 1/2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3 ounces Red Gelatin Powder (Cherry or Strawberry)
  • 3 ounces Blue Gelatin Powder (Berry)
  • 1 cup Butter (room temperature) for frosting
  • 5 cups Confectioners' Sugar for frosting
  • Red and Blue Icing Gel or Food Coloring for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. In another bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture alternately with milk until just combined.
  5. Divide the batter into three bowls; mix red gelatin powder into one bowl, blue gelatin powder into another, leaving the third plain for white.
  6. Spoon the colored batters into cupcake liners in the order: blue, white, red.
  7. Bake for about 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
  8. For frosting: Beat butter until creamy; gradually add confectioners' sugar, then milk and vanilla extract until desired consistency is achieved.
  9. Frost cooled cupcakes using an offset spatula; decorate with edible glitter or icing gel.
