- 3 ounces Red Gelatin Powder (Cherry or Strawberry)
- 3 ounces Blue Gelatin Powder (Berry)
- 1 cup Butter (room temperature) for frosting
- 5 cups Confectioners' Sugar for frosting
- Red and Blue Icing Gel or Food Coloring for decoration
Instructions
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with cupcake liners.
- In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- In another bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to the wet mixture alternately with milk until just combined.
- Divide the batter into three bowls; mix red gelatin powder into one bowl, blue gelatin powder into another, leaving the third plain for white.
- Spoon the colored batters into cupcake liners in the order: blue, white, red.
- Bake for about 18 minutes or until a toothpick comes out clean. Cool completely before frosting.
- For frosting: Beat butter until creamy; gradually add confectioners' sugar, then milk and vanilla extract until desired consistency is achieved.
- Frost cooled cupcakes using an offset spatula; decorate with edible glitter or icing gel.
