Description

A delicious and easy overnight Eggs Benedict Casserole with fluffy eggs, buttery English muffins, and savory Canadian bacon, all topped with a creamy hollandaise sauce. This is the perfect holiday breakfast or make-ahead brunch recipe!

Casserole Base:

  • 6 English muffins, cut into cubes
  • 1 lb Canadian bacon, chopped
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder

Hollandaise Sauce:

 

  • 4 large egg yolks
  • 1 tbsp lemon juice
  • ½ cup unsalted butter, melted
  • ¼ tsp cayenne pepper
  • ½ tsp Dijon mustard

Instructions

1. Prepare the Casserole Base

  1. Preheat oven to 350°F (175°C).
  2. Toast English muffins in the oven for 5-7 minutes until golden brown.
  3. Layer toasted English muffins and chopped Canadian bacon in a greased 9×13 baking dish.

2. Make the Egg Mixture

  1. In a large mixing bowl, whisk together eggs, milk, heavy cream, salt, black pepper, paprika, garlic powder, and onion powder.
  2. Pour the mixture evenly over the English muffin and bacon layers.

3. Chill Overnight (Optional)

  1. Cover the casserole with plastic wrap and refrigerate for at least 2 hours or overnight for the best texture.

4. Bake the Casserole

  1. Remove from the refrigerator 30 minutes before baking to prevent uneven cooking.
  2. Bake uncovered for 45 minutes, or until the eggs are set and the top is golden brown.

5. Make the Hollandaise Sauce

  1. In a heatproof bowl, whisk together egg yolks and lemon juice.
  2. Place the bowl over a double boiler and slowly drizzle in melted butter, whisking constantly until thickened.
  3. Add cayenne pepper and Dijon mustard, then whisk until smooth.

6. Assemble & Serve

 

  1. Drizzle warm hollandaise sauce over the baked casserole.
  2. Garnish with chopped chives, parsley, or extra paprika and serve immediately!
