Ingredients
Casserole Base:
- 6 English muffins, cut into cubes
- 1 lb Canadian bacon, chopped
- 8 large eggs
- 2 cups whole milk
- 1 cup heavy cream
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
Hollandaise Sauce:
- 4 large egg yolks
- 1 tbsp lemon juice
- ½ cup unsalted butter, melted
- ¼ tsp cayenne pepper
- ½ tsp Dijon mustard
Instructions
1. Prepare the Casserole Base
- Preheat oven to 350°F (175°C).
- Toast English muffins in the oven for 5-7 minutes until golden brown.
- Layer toasted English muffins and chopped Canadian bacon in a greased 9x13 baking dish.
2. Make the Egg Mixture
- In a large mixing bowl, whisk together eggs, milk, heavy cream, salt, black pepper, paprika, garlic powder, and onion powder.
- Pour the mixture evenly over the English muffin and bacon layers.
3. Chill Overnight (Optional)
- Cover the casserole with plastic wrap and refrigerate for at least 2 hours or overnight for the best texture.
4. Bake the Casserole
- Remove from the refrigerator 30 minutes before baking to prevent uneven cooking.
- Bake uncovered for 45 minutes, or until the eggs are set and the top is golden brown.
5. Make the Hollandaise Sauce
- In a heatproof bowl, whisk together egg yolks and lemon juice.
- Place the bowl over a double boiler and slowly drizzle in melted butter, whisking constantly until thickened.
- Add cayenne pepper and Dijon mustard, then whisk until smooth.
6. Assemble & Serve
- Drizzle warm hollandaise sauce over the baked casserole.
- Garnish with chopped chives, parsley, or extra paprika and serve immediately!
