  • 3 cups cooked rice
  • ½ cup Cotija cheese (plus extra for garnish)
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish
  • Optional toppings: avocado, black beans, jalapeños

Instructions

  1. Marinate the chicken by combining lime juice, avocado oil, chili powder, garlic powder, salt, and black pepper in a bowl. Coat the chicken thighs and let them rest in the fridge for 15-30 minutes.
  2. Heat a skillet over medium-high heat and cook the marinated chicken for 8-10 minutes on each side until golden brown. Remove from heat and slice into strips.
  3. In another bowl, mix grilled corn with red onion, sour cream, mayonnaise, Cotija cheese, chili powder, salt, and pepper. Add lime juice for zest.
  4. Reheat cooked rice until warm and fluffy.
