  • 1 cup long-grain white rice
  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups chicken broth
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a large skillet, heat oil over medium heat. Sauté onion until translucent (about 3-4 minutes). Add garlic and cook for another 30 seconds.
  3. Stir in the rinsed rice, cooking for 2-3 minutes until lightly toasted.
  4. Mix in cumin and chili powder, then add diced tomatoes with juices.
  5. Pour in chicken broth; bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is cooked.
  6. Stir in peas (if using), season with salt, cover again for 5 minutes off heat before fluffing with a fork.
  7. Garnish with fresh cilantro before serving.
