For the Beef Mixture
- 1 lb ground beef
- 1 chopped onion

- ½ tsp black pepper

- 1 tbsp minced garlic
For the Pizza Assembly
- 16 small fajita-size flour tortillas
- 1 can refried beans
- ½ to 1 cup taco sauce
- 2 cups shredded Colby Jack cheese
- 2 tbsp vegetable oil (for frying)

Instructions
Step 1: Cook the Ground Beef
- Heat a large skillet over medium-high heat.
- Add ground beef and chopped onions, cooking until beef is browned.
- Drain excess grease and season with salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic.
- Stir well and cook for another minute, then remove from heat.
Step 2: Fry the Tortillas
- In a separate skillet, heat a thin layer of vegetable oil over medium heat.
- Fry tortillas for 1-2 minutes per side until crispy and golden brown.
- Drain on paper towels to absorb excess oil.
Step 3: Assemble the Pizzas
- Preheat oven to 400°F.
- Spread refried beans onto one fried tortilla.
- Add a scoop of seasoned ground beef and a sprinkle of shredded cheese.
- Place another fried tortilla on top and press gently.
- Spoon taco sauce over the top and add more shredded cheese.
Step 4: Bake the Pizzas
- Place the assembled pizzas on a baking sheet.
- Bake for 10 minutes, or until the cheese is melted and bubbly.
Step 5: Garnish and Serve
- Remove from the oven and top with diced tomatoes and chopped green onions.
- Slice into halves or quarters and serve hot.
