Description

For the Beef Mixture

  • 1 lb ground beef
  • 1 chopped onion
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • ¼ tsp cayenne pepper
  • 1 tbsp minced garlic

For the Pizza Assembly

  • 16 small fajita-size flour tortillas
  • 1 can refried beans
  • ½ to 1 cup taco sauce
  • 2 cups shredded Colby Jack cheese
  • 2 tbsp vegetable oil (for frying)

Toppings

  • Diced tomatoes
  • Chopped green onions

Instructions

Step 1: Cook the Ground Beef

  1. Heat a large skillet over medium-high heat.
  2. Add ground beef and chopped onions, cooking until beef is browned.
  3. Drain excess grease and season with salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic.
  4. Stir well and cook for another minute, then remove from heat.

Step 2: Fry the Tortillas

  1. In a separate skillet, heat a thin layer of vegetable oil over medium heat.
  2. Fry tortillas for 1-2 minutes per side until crispy and golden brown.
  3. Drain on paper towels to absorb excess oil.

Step 3: Assemble the Pizzas

  1. Preheat oven to 400°F.
  2. Spread refried beans onto one fried tortilla.
  3. Add a scoop of seasoned ground beef and a sprinkle of shredded cheese.
  4. Place another fried tortilla on top and press gently.
  5. Spoon taco sauce over the top and add more shredded cheese.

Step 4: Bake the Pizzas

  1. Place the assembled pizzas on a baking sheet.
  2. Bake for 10 minutes, or until the cheese is melted and bubbly.

Step 5: Garnish and Serve

  1. Remove from the oven and top with diced tomatoes and chopped green onions.
  2. Slice into halves or quarters and serve hot.

Notes

  • For extra crispiness, bake the tortillas instead of frying them.
