Description

Zesty, flavorful, and easy-to-make grilled chicken recipe with fresh lemon and herbs. Perfect for meal prep, weeknight dinners, or BBQs.

Chicken:

  • 2 pounds chicken breasts, trimmed

Marinade:

  • ¼ cup extra virgin olive oil

  • ¼ cup lemon juice (fresh)

  • 1 tbsp dried basil

  • 1 tbsp dried parsley

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp crushed red pepper flakes


Instructions

  1. Place chicken and all marinade ingredients into a gallon Ziploc bag.

  2. Seal and remove excess air. Massage to coat.

  3. Marinate in fridge for 1–12 hours.

  4. Grill Method: Preheat grill to medium. Grill 5–7 minutes per side until juices run clear and internal temp hits 165°F.

  5. Stovetop Method: Heat 2 tbsp olive oil in skillet. Sear chicken 5 minutes per side until golden and cooked through.

  6. Rest for 5 minutes before serving.

Notes

  • Use thighs for a juicier variation.

  • Add fresh herbs for a more vibrant marinade.

  • Always use fresh lemon juice for best flavor.
