  • 4 bags of Earl Grey tea (divided)
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter (grated)
  • 2 large eggs (lightly beaten)
  • 2/3 cup cold heavy cream (extra for brushing)
  • 2 teaspoons vanilla extract
  • 1 cup fresh blackberries
  • 1 cup powdered sugar
  • 1 1/2 tablespoons lemon juice (fresh)
  • 1 teaspoon vanilla
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine flour, sugar, baking powder, salt, and two bags of brewed Earl Grey tea leaves.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, whisk together eggs, heavy cream, and vanilla; add to dry ingredients and stir until just combined.
  5. Gently fold in fresh blackberries.
  6. Turn the dough onto a floured surface; pat it into a circle about an inch thick and cut into wedges or rounds.
  7. Bake for about 15 minutes or until golden brown.
  8. While baking, whisk together powdered sugar, lemon juice, zest, and vanilla for the glaze.
