  • 2 cups ripe bananas (about 3 medium)
  • 1/3 cup smooth almond butter
  • 3 large eggs (room temperature)
  • 1/2 cup almond flour
  • 2 tbsp coconut flour
  • 1/3 cup cocoa powder
  • 1/3 cup coconut sugar
  • 1 tsp baking soda
  • Pinch of salt
  • 3/4 cup chocolate chips (divided)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the eggs and almond butter; whisk until well combined.
  4. In another bowl, whisk together dry ingredients: almond flour, coconut flour, cocoa powder, baking soda, salt, and coconut sugar.
  5. Gently fold dry ingredients into wet ingredients until just mixed; avoid overmixing.
  6. Fold in half of the chocolate chips.
  7. Line an 8×4 loaf pan with parchment paper and pour in the batter.
  8. Top with remaining chocolate chips.
  9. Bake for 35–37 minutes or until a toothpick comes out clean.
