- ½ cup pickle juice (120ml)
- 3 yellow potatoes (400g), peeled and cubed
- 5 cups low sodium vegetable broth
- 1 cup sour cream (250ml)
- 1.5 tablespoons all-purpose flour
Instructions
- In a large pot over medium-high heat, melt butter (or oil) and sauté onion, carrot, and celery until translucent.
- Add pickles, pickle juice, cubed potatoes, and vegetable broth; season with salt to taste.
- Bring to a boil then reduce heat to low; simmer uncovered for 20-25 minutes until potatoes are soft.
- In a separate bowl, mix sour cream with flour until smooth.
- Ladle some hot broth into the sour cream mixture to temper it; whisk until combined.
- Gradually add back into the soup while stirring gently over low heat.
- Stir in fresh dill before serving.
