For the Deviled Egg Dressing:

  • ¾ cup mayonnaise
  • 1 ½ tablespoons Dijon mustard
  • 1 teaspoon white vinegar or fresh lemon juice
  • 1 clove garlic, finely minced or crushed
  • ½ teaspoon kosher salt (adjust to taste)
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper

Instructions

Step 1: Cook the Pasta

  1. Cook pasta according to package directions in salted water.
  2. Drain and rinse under cold water to stop the cooking process.

Step 2: Prepare the Eggs

  1. Peel the hard-boiled eggs and separate the yolks from the whites.
  2. Finely chop the egg whites and set aside.
  3. Mash the egg yolks into a fine powder using a strainer or fork.

Step 3: Make the Dressing

  1. In a large bowl, whisk together egg yolks, mayo, mustard, vinegar, garlic, salt, paprika, and cayenne.
  2. Stir until smooth and creamy.

Step 4: Assemble the Salad

  1. Add cooked pasta to the dressing and toss to coat evenly.
  2. Mix in chopped egg whites, red onion, green onions, and bacon (if using).
