- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 6 tablespoons unsalted butter (cold)
- 1 cup buttermilk (or see substitution notes)
- ⅔ cup blueberries
For the Glaze (Optional)
- ½ cup powdered sugar
- 1 tablespoon butter (melted)
- 2 tablespoons milk (2% preferred)
- ½ teaspoon vanilla extract
Instructions
For the Biscuits
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Freeze the butter for 10 minutes, then grate it using a cheese grater.
- Toss the rinsed and dried blueberries with 1 teaspoon of flour to prevent excess moisture.
- In a mixing bowl, combine flour, baking powder, salt, and sugar. Add the grated butter and mix gently.
- Pour in the buttermilk and stir until just combined. Fold in the blueberries carefully.
- Drop the dough by ¼-cup portions onto the baking sheet, making sure the biscuits are touching.
- Bake for 15–18 minutes or until golden brown and cooked through.
For the Glaze (Optional)
- Whisk powdered sugar, melted butter, milk, and vanilla extract until smooth.
- Drizzle over the biscuits before serving, while warm or cooled.
Notes
- To make a buttermilk substitute: Add 1 tablespoon of lemon juice or vinegar to 1 cup of milk, stir, and let sit for 10 minutes.
- For a golden finish without glaze, brush the tops of the biscuits with melted butter halfway through baking.
- Store leftovers in an airtight container for up to 2 days, or freeze for longer storage.
