Description

  • 2 (14.1 oz) packs Pillsbury refrigerated pie crusts
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  • Make the filling: Simmer brown sugar, corn syrup, eggs, butter, and salt. Stir in pecans and vanilla, then let cool.
  • Prepare the dough: Roll out the pie crusts and cut into 4-inch circles.
  • Assemble the pies: Add filling, fold the dough over, and crimp the edges with a fork.
  • Fry: Heat oil to 350°F, fry for 1-2 minutes per side until golden.
  • Drain & dust: Place on paper towels, then sprinkle with powdered sugar. Serve warm.
