  • 45 medium russet or Yukon gold potatoes, thinly sliced
  • 1 medium onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese (divided)
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef and chopped onion for 5-7 minutes until no pink remains. Drain excess fat.
  2. Thinly slice the potatoes to about 1/8 inch thickness.
  3. In the crockpot, layer half of the sliced potatoes, half of the cooked beef mixture, and some shredded cheese. Repeat these layers with remaining ingredients.
  4. In a mixing bowl, whisk together cream of mushroom soup, milk, garlic powder, salt, and pepper. Pour over layered ingredients in the crockpot.
  5. Cover and cook on low for 6-8 hours until potatoes are tender and cheese is bubbly.
  6. About 15 minutes before serving, sprinkle remaining cheddar cheese on top and allow it to melt.
