Ingredients List

Main Ingredients:

  • 56 large russet potatoes (or Yukon Gold potatoes), peeled and diced into 1-inch cubes
  • 2 cups shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
  • 1 cup sour cream
  • 1 can (10.5 oz) condensed cream of chicken soup (or cream of mushroom for a vegetarian option)
  • 1/2 cup diced onion (optional)
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  • Prepare the Potatoes: Start by peeling the potatoes and cutting them into 1-inch cubes. Place the diced potatoes into a large mixing bowl.
  • Mix the Ingredients: In the mixing bowl with the potatoes, add the shredded cheddar cheese, sour cream, condensed soup, diced onion (if using), melted butter, garlic powder, onion powder, salt, and pepper. Mix everything together until the potatoes are evenly coated with the cheesy mixture.
  • Transfer to Slow Cooker: Lightly grease the inside of your slow cooker with non-stick spray or a little butter. Transfer the potato mixture to the slow cooker, spreading it out evenly.
  • Cook on Low or High: Cover the slow cooker with the lid and cook on low for 4-5 hours or on high for 2-3 hours, until the potatoes are tender and cooked through.
  • Stir and Check for Doneness: About halfway through the cooking time, gently stir the potatoes to ensure even cooking. Check for doneness by inserting a fork into the potatoes; they should be tender and easy to pierce.
  • Optional Toppings: If you’re adding a breadcrumb topping, sprinkle it over the top during the last hour of cooking. You can also add additional shredded cheese on top for an extra cheesy finish.
  • Serve and Enjoy: Once the potatoes are tender and the cheese is melted and bubbly, the dish is ready to serve. Serve hot, straight from the slow cooker, and enjoy the creamy, cheesy goodness.

Notes

  • Experiment with Cheeses: While cheddar is the go-to cheese for this dish, you can mix things up by using a combination of cheeses. Try adding Monterey Jack for a creamier texture, Gruyère for a nutty flavor, or a bit of Parmesan for a sharp, savory kick.
  • Make It a Meal: Turn your Crockpot Cheesy Potatoes into a main dish by adding protein like diced ham, cooked bacon, or shredded chicken. You can also mix in vegetables like broccoli or spinach for added nutrition and color.
  • Crispy Topping: For a crispy finish, transfer the cheesy potatoes to an oven-safe dish, top with breadcrumbs mixed with melted butter, and broil for a few minutes before serving. This step adds a delightful crunch that contrasts with the creamy potatoes.
