  • 1 lb dry navy beans (soaked overnight)
  • 12 oz applewood smoked bacon (chopped)
  • 1 sweet onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups chicken stock
  • 1 cup bourbon (optional)
  • 3/4 cup BBQ sauce
  • 1/4 cup ketchup
  • 2 tablespoons molasses
  • 3 tablespoons pure maple syrup
  • 1/2 cup brown sugar

Instructions

  1. Soak navy beans in a large pot of water overnight. Drain and rinse.
  2. In a skillet, cook chopped bacon until crisp; remove and drain on paper towels.
  3. Sauté onions in bacon grease until caramelized, about 15 minutes. Add garlic for an additional 2 minutes.
  4. In the same pot used for soaking beans, combine soaked beans with chicken stock, bourbon (if using), BBQ sauce, ketchup, molasses, maple syrup, and brown sugar. Bring to a boil.
  5. Transfer mixture to the crockpot and add crispy bacon and sautéed onions and garlic. Cook on high for 5-6 hours or low for 10-12 hours, stirring occasionally.
  6. Once done cooking, let beans sit on warm setting for up to an hour to thicken before serving.
