Crispy Chilli Chicken is a tantalizing dish that perfectly marries crunchy fried chicken with a spicy garlic sauce, making it an ideal choice for appetizers or quick weeknight dinners.

- 1 pound boneless, skinless chicken breasts
- ½ cup all-purpose flour
- ½ cup cornstarch
- 1 teaspoon baking powder
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon paprika
- 1 large egg
- ½ cup cold water
- Vegetable oil, for frying
- 3 tablespoons vegetable oil (for sauce)
- 4 cloves garlic, minced
- 2–3 tablespoons red chili sauce (adjust to taste)
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 2 green onions, sliced
- Sesame seeds, for garnish (optional)
Instructions
- In a bowl, mix flour, cornstarch, baking powder, salt, pepper, and paprika. In another bowl, whisk the egg with cold water.
- Dip chicken pieces into the egg mix then coat with the flour mixture.
- Heat oil in a deep skillet to 350°F (175°C). Fry chicken in batches until golden brown (about 4-5 minutes). Drain on paper towels.
- In another pan, heat 3 tablespoons of vegetable oil, sauté garlic for 30 seconds, then add chili sauce, soy sauce, rice vinegar, and sugar. Cook until slightly thickened.
- Toss fried chicken in the sauce until well coated. Garnish with green onions and sesame seeds before serving.
