Ingredients

  • ⅓ cup (80 ml) very hot water
  • 3 Tablespoons natural cocoa powder
  • 1 cup (125 g) all-purpose flour
  • 3 Tablespoons granulated sugar
  • ½ teaspoon table salt
  • 1 cup (236 ml) whole milk
  • 2 large eggs
  • 2 Tablespoons unsalted butter, melted
  • ¾ teaspoon vanilla extract
  • Cooking oil or spray for cooking
Chocolate Sauce:
  • ½ cup (120 ml) heavy cream
  • ½ cup (85 g) dark or semisweet chocolate, chopped
  • 1 Tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1 Tablespoon honey or sugar (optional)

Instructions

  • Prepare the Chocolate Sauce:
    • Heat heavy cream in a saucepan over medium heat until steaming but not boiling.
    • Remove from heat and add chopped chocolate. Stir until melted.
    • Add butter, vanilla, and honey (if using). Stir until smooth.
  • Make the Crêpe Batter:
    • In a small bowl, whisk together hot water and cocoa powder until fully combined.
    • In a blender, combine all remaining ingredients along with the cocoa mixture. Blend until smooth.
    • Refrigerate for 30-60 minutes to let the batter rest.
  • Cook the Crêpes:
    • Heat a non-stick skillet over medium heat and lightly grease it.
    • Pour ¼ cup batter into the pan, swirling to coat the bottom evenly.
    • Cook for 1-2 minutes, until the edges look dry. Flip and cook for another 30 seconds.
    • Repeat with remaining batter.
  • Serve:
    • Drizzle with homemade chocolate sauce and top with fruit, whipped cream, or nuts.
    • Serve warm and enjoy!
