- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 lbs boneless, skinless chicken breast
- ½ teaspoon salt
- ⅛ teaspoon black pepper
- 1 teaspoon Italian seasoning
- 2 garlic cloves, minced
- 3 cups baby spinach
- 8 ounces sun-dried tomatoes (drained)
- 3 cups heavy cream
- ½ cup Parmesan cheese (grated)
- ½ pound penne pasta
Instructions
- Season the chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet and cook the chicken until golden brown. Remove and dice into cubes.
- Boil penne pasta until al dente, then drain.
- In the same skillet, melt butter and sauté garlic, sun-dried tomatoes, and spinach.
- Add heavy cream, bring to a simmer, and stir in Parmesan cheese.
- Combine cooked pasta, diced chicken, and sauce. Toss to coat.
- Serve hot with extra Parmesan cheese or fresh parsley.
Notes
- Substitute spinach with broccoli or kale if preferred.
- For a lighter version, use half-and-half instead of heavy cream.
- Add a splash of white wine to the sauce for added depth of flavor.
