Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 lbs boneless, skinless chicken breast
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 garlic cloves, minced
  • 3 cups baby spinach
  • 8 ounces sun-dried tomatoes (drained)
  • 3 cups heavy cream
  • ½ cup Parmesan cheese (grated)
  • ½ pound penne pasta

Instructions

  1. Season the chicken with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet and cook the chicken until golden brown. Remove and dice into cubes.
  3. Boil penne pasta until al dente, then drain.
  4. In the same skillet, melt butter and sauté garlic, sun-dried tomatoes, and spinach.
  5. Add heavy cream, bring to a simmer, and stir in Parmesan cheese.
  6. Combine cooked pasta, diced chicken, and sauce. Toss to coat.
  7. Serve hot with extra Parmesan cheese or fresh parsley.

Notes

  • Substitute spinach with broccoli or kale if preferred.
  • For a lighter version, use half-and-half instead of heavy cream.
  • Add a splash of white wine to the sauce for added depth of flavor.
