  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 1/2 cups whole milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden brown (4-5 minutes each side). Remove from skillet.
  3. In a medium saucepan, boil chicken broth and salt; add rice, cover, and simmer for 15-18 minutes until fluffy.
  4. In the same skillet, melt butter and whisk in flour. Gradually add milk and chicken broth to create a smooth sauce; stir in seasonings and cheeses until thickened.
  5. Return chicken to the skillet with the sauce; cover and simmer on low for about 10 minutes.
  6. Serve over rice with fresh parsley garnish.
