- 4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons unsalted butter
- 1 1/2 cups whole milk
- 1/2 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 tablespoons olive oil
Instructions
- Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat and sear chicken until golden brown (4-5 minutes each side). Remove from skillet.
- In a medium saucepan, boil chicken broth and salt; add rice, cover, and simmer for 15-18 minutes until fluffy.
- In the same skillet, melt butter and whisk in flour. Gradually add milk and chicken broth to create a smooth sauce; stir in seasonings and cheeses until thickened.
- Return chicken to the skillet with the sauce; cover and simmer on low for about 10 minutes.
- Serve over rice with fresh parsley garnish.
