Description

This Creamy Mushroom and Asparagus Chicken Penne is a perfect blend of tender chicken, earthy mushrooms, and fresh asparagus in a garlic-Parmesan cream sauce. A quick and flavorful pasta dish for a comforting dinner.

For the Pasta:

  • 8 ounces dry penne pasta

For the Chicken:

  • 3 boneless, skinless chicken breasts, pounded to even thickness
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons butter, divided

For the Vegetables:

  • ½ cup sliced mushrooms
  • 1 pound asparagus spears, trimmed and cut into 2-inch pieces
  • 3 teaspoons minced garlic

For the Sauce:

  • ⅓ cup shredded Parmesan cheese

Instructions

  • Cook the Pasta – Boil penne pasta in salted water for 7-9 minutes until al dente. Drain and set aside.
  • Prepare the Chicken – Dredge chicken breasts in flour, salt, and pepper. Sear in 1 tbsp butter over medium heat for 4-5 minutes per side. Let rest, then slice into strips.
  • Cook the Vegetables – Melt remaining 2 tbsp butter, sauté garlic for 30 seconds, then add mushrooms and asparagus, cooking for 4-6 minutes.
  • Combine Everything – Stir in cooked pasta and chicken, then sprinkle with Parmesan cheese and mix until well coated.
  • Serve & Enjoy – Garnish with extra Parmesan if desired.

Notes

  • No penne? Use rigatoni, fusilli, or bowtie pasta.
  • For extra creaminess, add ¼ cup heavy cream.
  • Make it gluten-free by using gluten-free pasta & flour.
