For the Pasta:
- 8 ounces dry penne pasta
For the Chicken:
- 3 boneless, skinless chicken breasts, pounded to even thickness
- ¼ cup all-purpose flour
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 3 tablespoons butter, divided
For the Vegetables:
- ½ cup sliced mushrooms
- 1 pound asparagus spears, trimmed and cut into 2-inch pieces
- 3 teaspoons minced garlic
For the Sauce:
- ⅓ cup shredded Parmesan cheese
Instructions
- Cook the Pasta – Boil penne pasta in salted water for 7-9 minutes until al dente. Drain and set aside.
- Prepare the Chicken – Dredge chicken breasts in flour, salt, and pepper. Sear in 1 tbsp butter over medium heat for 4-5 minutes per side. Let rest, then slice into strips.
- Cook the Vegetables – Melt remaining 2 tbsp butter, sauté garlic for 30 seconds, then add mushrooms and asparagus, cooking for 4-6 minutes.
- Combine Everything – Stir in cooked pasta and chicken, then sprinkle with Parmesan cheese and mix until well coated.
- Serve & Enjoy – Garnish with extra Parmesan if desired.
Notes
- No penne? Use rigatoni, fusilli, or bowtie pasta.
- For extra creaminess, add ¼ cup heavy cream.
- Make it gluten-free by using gluten-free pasta & flour.
