  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1 small shallot, minced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1/2 cup low-sodium chicken broth
  • 1 cup half and half
  • 1/4 cup fresh lemon juice (from 12 lemons)
  • 1 teaspoon lemon pepper seasoning
  • Fresh parsley or basil for garnish

Instructions

  1. Pat the chicken dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken cutlets for about 5-7 minutes on each side until golden brown and cooked through (165°F internal temperature). Remove from skillet.
  3. In the same skillet, reduce heat to medium-low; melt butter. Sauté shallots for 1-2 minutes, then add garlic and cook for another minute.
  4. Sprinkle flour into the pan; stir constantly for about two minutes before adding chicken broth. Scrape up any browned bits from the bottom.
