  • 8 ounces fettuccine pasta
  • 1 pound large prawns, peeled and deveined
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • Zest and juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Cook fettuccine in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Season prawns with salt and pepper; cook for 2-3 minutes on each side until pink. Remove from skillet.
  3. In the same skillet, melt remaining butter; sauté garlic until fragrant (about 1 minute).
  4. Pour in heavy cream, bring to simmer, then stir in Parmesan cheese, lemon zest, and juice. Cook until thickened (2-3 minutes).
  5. Add prawns back to skillet and mix well before tossing in the cooked fettuccine.
  6. Serve garnished with chopped parsley and extra Parmesan if desired.
