Instructions
Step 1: Prepare the Slow Cooker
- Place mushrooms in the slow cooker.
Step 2: Coat and Sear the Beef
- Trim any excess fat from the beef and cut into 2-inch chunks.
- In a large bowl, toss the beef with 1/3 cup flour, salt, and black pepper until evenly coated.
- Heat 1 tbsp oil in a skillet over medium-high heat.
- Sear half of the beef for 2-3 minutes per side until browned. Transfer to the slow cooker.
- Repeat with the remaining oil and beef.
Step 3: Cook the Aromatics
- In the same skillet, add onions, garlic, and thyme. Cook for 4 minutes until softened.
- Sprinkle the reserved flour from the beef bowl over the onions and stir for 1 minute.
- Pour in the beef broth and Worcestershire sauce, scraping the bottom of the pan. Bring to a simmer.
- Transfer everything to the slow cooker.

- Stir everything together in the slow cooker.
