Instructions

Step 1: Prepare the Slow Cooker

  • Place mushrooms in the slow cooker.

Step 2: Coat and Sear the Beef

  1. Trim any excess fat from the beef and cut into 2-inch chunks.
  2. In a large bowl, toss the beef with 1/3 cup flour, salt, and black pepper until evenly coated.
  3. Heat 1 tbsp oil in a skillet over medium-high heat.
  4. Sear half of the beef for 2-3 minutes per side until browned. Transfer to the slow cooker.
  5. Repeat with the remaining oil and beef.

Step 3: Cook the Aromatics

  1. In the same skillet, add onions, garlic, and thyme. Cook for 4 minutes until softened.
  2. Sprinkle the reserved flour from the beef bowl over the onions and stir for 1 minute.
  3. Pour in the beef broth and Worcestershire sauce, scraping the bottom of the pan. Bring to a simmer.
  4. Transfer everything to the slow cooker.

Step 4: Slow Cook the Beef Tips

  1. Stir everything together in the slow cooker.
  2. Cover and cook on LOW for 8 hours, until the beef is fork-tender.

Step 5: Add the Creamy Finish

  1. In a small bowl, whisk heavy cream and 1 tbsp flour until smooth.
  2. Pour the mixture into the slow cooker, stirring to combine.
  3. Cover and cook for another 30 minutes.
