  • 1 tablespoon salt (for boiling water)

For the Sauce:

  • 1 cup basil pesto (store-bought or homemade)
  • 1½ cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ¼ teaspoon crushed red pepper flakes (optional)

Optional Additions:

  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup steamed broccoli

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add pasta and cook until al dente, following package instructions.
  3. Reserve 1 cup of pasta water before draining, then set aside.

Step 2: Prepare the Chicken

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken pieces with salt, pepper, and garlic powder.
  3. Add chicken to the skillet and sauté for 6–8 minutes, until golden brown and fully cooked. Remove and set aside.

Step 3: Make the Creamy Pesto Sauce

  1. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute).
  2. Pour in the heavy cream and bring to a gentle simmer.
  3. Stir in the basil pesto and Parmesan cheese until smooth and creamy.
  4. Add a pinch of red pepper flakes, if desired.

Step 4: Combine Pasta, Sauce, and Chicken

  1. Return the cooked chicken to the skillet.
  2. Add the cooked pasta and toss to coat evenly with the sauce.
  3. Stir in spinach, cherry tomatoes, or broccoli, if using.

Step 5: Serve

  1. Serve warm, garnished with extra Parmesan cheese and fresh basil leaves.
  2. Optional: Drizzle with olive oil for a glossy finish.

Notes

  • Substitute heavy cream with half-and-half or coconut cream for a lighter/dairy-free option.
  • Use gluten-free pasta or whole wheat pasta to suit dietary needs.
