  • 1 pound boneless, skinless chicken breasts
  • 2 teaspoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with Cajun seasoning on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Cook the chicken for about 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, sauté sliced bell peppers and onion for roughly 5 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  4. Deglaze the skillet by pouring in chicken broth while scraping up any browned bits. Reduce heat to medium.
  5. Stir in heavy cream, Dijon mustard, and Worcestershire sauce; simmer for 3-5 minutes until slightly thickened.
  6. Return cooked chicken to the skillet, coating it in the creamy sauce. Season with salt and pepper to taste.
  7. Serve over cooked rice or pasta and garnish with chopped parsley.
