  • 4 cups fresh broccoli florets
  • 4 cups vegetable broth
  • 1 cup whole milk
  • 8 ounces sharp cheddar cheese, grated
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • Optional: 2 tablespoons cornstarch (for thickening) and paprika

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in garlic and cook for an additional 30 seconds.
