  • 1 ½ cups light brown sugar
  • ½ cup all-purpose flour
  • 1 ½ cups chopped pecans
  • ½ cup butter, melted
  • 5 ounces evaporated milk
  • 3.4 ounces instant lemon pudding
  • (2) 8 ounces cream cheese
  • ¾ cup frozen lemonade concentrate
  • 1 ½ cups fresh blueberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F. Spray an 8×8 baking dish with non-stick spray.
  2. In a bowl, mix together the crust ingredients until combined. Press into the baking dish and bake for 15 minutes. Let cool.
  3. Combine evaporated milk and pudding mix in another bowl; beat until thickened. In a separate bowl, beat cream cheese until fluffy; gradually add lemonade concentrate and combine. Fold in the pudding mixture and spread over the cooled crust.
  4. For the topping, cook blueberries with sugar, lemon juice, and cornstarch in a saucepan over medium heat until thickened (about 5–7 minutes). Cool and pour over the filling.
  5. Refrigerate for at least 4 hours before serving.
