Frosting:
- ½ (8-ounce) package cream cheese, softened
- ¼ cup unsalted butter, softened
- 3 cups confectioners’ sugar
- 1 teaspoon orange extract
Topping:
- ½ cup sweetened dried cranberries, chopped
- 1 tablespoon grated orange zest
- ⅓ cup white chocolate chips
- ½ teaspoon canola oil
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- Cream butter and sugars in a large bowl using an electric mixer until light and fluffy.
- Add eggs, orange extract, and vanilla extract, mixing until fully combined.
- Whisk flour, baking powder, and ground ginger in a separate bowl. Slowly add to wet ingredients, mixing until just combined.
- Stir in dried cranberries and white chocolate chips. Spread dough evenly into the prepared pan.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- Prepare the frosting: Beat cream cheese and butter until fluffy. Add confectioners’ sugar and orange extract, mixing until smooth.
- Frost the cooled bars evenly with the prepared cream cheese frosting.
- For the topping, mix chopped cranberries and orange zest, then sprinkle over the frosting.
- Melt white chocolate chips with canola oil in the microwave, stirring every 15 seconds until smooth. Drizzle over the bars.
- Let bars sit for 1 hour before cutting into squares or triangles. Serve and enjoy!
