Ingredients

Scale

Bars:

  • 1 cup unsalted butter, at room temperature
  • 1 cup brown sugar
  • ⅓ cup white sugar
  • 3 large eggs
  • 1 teaspoon orange extract
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground ginger
  • 1 cup sweetened dried cranberries
  • ½ cup white chocolate chips

Frosting:

  • ½ (8-ounce) package cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 3 cups confectioners’ sugar
  • 1 teaspoon orange extract

Topping:

  • ½ cup sweetened dried cranberries, chopped
  • 1 tablespoon grated orange zest
  • ⅓ cup white chocolate chips
  • ½ teaspoon canola oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. Cream butter and sugars in a large bowl using an electric mixer until light and fluffy.
  3. Add eggs, orange extract, and vanilla extract, mixing until fully combined.
  4. Whisk flour, baking powder, and ground ginger in a separate bowl. Slowly add to wet ingredients, mixing until just combined.
  5. Stir in dried cranberries and white chocolate chips. Spread dough evenly into the prepared pan.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  7. Prepare the frosting: Beat cream cheese and butter until fluffy. Add confectioners’ sugar and orange extract, mixing until smooth.
  8. Frost the cooled bars evenly with the prepared cream cheese frosting.
  9. For the topping, mix chopped cranberries and orange zest, then sprinkle over the frosting.
  10. Melt white chocolate chips with canola oil in the microwave, stirring every 15 seconds until smooth. Drizzle over the bars.
  11. Let bars sit for 1 hour before cutting into squares or triangles. Serve and enjoy!
