Ingredients
Scale
- 3 large burrito-sized spinach tortillas
- 8 ounces cream cheese, softened
- 6 ounces feta cheese
- ⅔ cup dried cranberries
- 5 green onions, diced
- 2 tablespoons chopped green onions for garnish
- ¼ teaspoon black pepper
Instructions
- In a mixing bowl, combine softened cream cheese, feta cheese, dried cranberries, diced green onions, and black pepper. Mix until fully combined.
- Lay a tortilla flat on a cutting board and spread an even layer of the mixture across the entire surface, making sure to cover the edges.
- Sprinkle the additional chopped green onions evenly over the filling.
- Roll the tortilla tightly into a log, applying gentle pressure. Repeat for all tortillas.
- Wrap each roll tightly in plastic wrap and refrigerate for at least 1 hour or up to 8 hours.
- Remove the plastic wrap and slice into ½-inch pinwheels. Arrange on a platter and serve.
Notes
- Ensure the cream cheese is softened for smooth mixing.
- Don’t overfill the tortillas to prevent the rolls from unwrapping.
- Refrigerate for at least 1 hour before slicing to allow the filling to set.
- Store leftovers in an airtight container for up to 3 days.
