  • Yield: Serves 6-8 1x

Description

This Cranberry Coleslaw is a delicious twist on a classic side dish. With its perfect blend of tangy, sweet, and crunchy flavors, it’s ideal for barbecues, holiday feasts, or any gathering. The creamy dressing coats crunchy cabbage, sweet dried cranberries, and nutty sunflower kernels, making it a refreshing and versatile addition to any meal!

Ingredients

Scale

Dressing

  • ⅓ cup mayonnaise (use high-quality mayo like Hellman’s)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon sugar
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Coleslaw Mix

  • 16 ounces shredded coleslaw mix (or a mix of shredded cabbage and carrots)
  • ¼ cup sliced green onion

Add-Ins

  • 1¼ cups dried cranberries
  • ¼ cup roasted, salted sunflower kernels (or substitute with almonds, pecans, or pumpkin seeds)

Instructions

  • Make the Dressing
    • In a small mixing bowl, whisk together mayonnaise, red wine vinegar, sugar, kosher salt, and black pepper until smooth and well-combined. Adjust seasoning to taste.
  • Prepare the Coleslaw Mix
    • In a large mixing bowl, add the shredded coleslaw mix and sliced green onions.
  • Combine Dressing and Coleslaw
    • Pour the dressing over the coleslaw mix. Gently fold with a spatula or large spoon until the cabbage and carrots are evenly coated with the dressing.
  • Chill
    • Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours to let the flavors meld together.
  • Add Cranberries and Sunflower Kernels
    • Just before serving, fold in the dried cranberries and sunflower kernels for texture and flavor. If desired, sprinkle additional cranberries and sunflower kernels on top for garnish.
  • Serve and Enjoy
    • Serve the cranberry coleslaw chilled as a side dish. It’s perfect for barbecues, holiday dinners, or as a topping for sandwiches!

Notes

  • Make Ahead: You can prepare the coleslaw mix and dressing up to 24 hours in advance, but wait to add the cranberries and sunflower kernels until just before serving.
  • Customizable: Swap sunflower kernels for nuts like pecans or almonds, or add shredded apples or purple cabbage for extra flavor and color.
  • Lighten It Up: Replace half the mayonnaise with Greek yogurt for a lighter, tangy dressing.
