  • 4 medium sweet potatoes (washed and scrubbed)
  • 2 tablespoons unsalted butter (melted)
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup cranberries (dried or fresh, chopped)
  • 1 medium apple (peeled, cored, and diced)
  • 2 tablespoons fresh parsley (finely chopped for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prick sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes until tender.
  3. Once cool, slice each potato in half and scoop out the flesh into a mixing bowl.
  4. Add melted butter, brown sugar, cinnamon, cranberries, and diced apple to the bowl. Mash until smooth.
  5. Spoon the filling back into each sweet potato skin and top with a mixture of chopped nuts and brown sugar.
  6. Bake again for 15-20 minutes until golden and crispy.
  7. Garnish with fresh parsley before serving.
