  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 ounces cream cheese, softened
  • 1 cup cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • ¼ cup green onions, sliced

Instructions

  1. Preheat the oven to 400°F (200°C). Scrub and poke holes in russet potatoes. Rub with olive oil and sprinkle with salt. Bake directly on the oven rack for 45-60 minutes until tender.
  2. Place chicken breasts in a slow cooker. Sprinkle ranch seasoning over them and cook on low for 6-8 hours or high for 3-4 hours until easily shredded.
  3. Shred the chicken using two forks and mix it with cream cheese, crumbled bacon, and half of the cheddar cheese until well combined.
  4. Slice baked potatoes in half lengthwise and scoop out some flesh to make room for the filling. Spoon the chicken mixture into each potato half.
  5. Top with remaining cheddar cheese and bake again for 10-15 minutes until cheese is melted and bubbly.
