Ingredients

  • 6 large eggs
  • ½ cup cottage cheese (full-fat recommended)
  • ½ cup shredded cheddar cheese (or Gruyère, Monterey Jack)
  • ¼ cup heavy cream (or milk for a lighter version)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Optional Add-ins:

  • Vegetables: Chopped spinach, mushrooms, bell peppers
  • Proteins: Crumbled bacon, diced ham, cooked sausage
  • Herbs & Spices: Chives, garlic powder, smoked paprika

Instructions

Oven Method:

  1. Preheat oven to 325°F (163°C).
  2. Blend eggs, cottage cheese, shredded cheese, cream, salt, and pepper in a blender until smooth.
  3. Grease a muffin tin or silicone molds, then pour the mixture evenly into each cup.
  4. Bake for 20-25 minutes until set in the center.
  5. Cool for 5 minutes before removing from the mold.

Sous Vide Method:

  1. Preheat sous vide water bath to 172°F (78°C).
  2. Blend ingredients until smooth.
  3. Grease small mason jars, then pour in the mixture.
  4. Sous vide for 60 minutes, then let cool before serving.

Notes

  • Full-fat cottage cheese makes the bites extra creamy.
  • Blend the mixture well for a smooth texture.
