- 6 large eggs
- ½ cup cottage cheese (full-fat recommended)
- ½ cup shredded cheddar cheese (or Gruyère, Monterey Jack)
- ¼ cup heavy cream (or milk for a lighter version)
- ½ teaspoon salt
- ¼ teaspoon black pepper
Optional Add-ins:
- Vegetables: Chopped spinach, mushrooms, bell peppers
- Proteins: Crumbled bacon, diced ham, cooked sausage
- Herbs & Spices: Chives, garlic powder, smoked paprika
Instructions
Oven Method:
- Preheat oven to 325°F (163°C).
- Blend eggs, cottage cheese, shredded cheese, cream, salt, and pepper in a blender until smooth.
- Grease a muffin tin or silicone molds, then pour the mixture evenly into each cup.
- Bake for 20-25 minutes until set in the center.
- Cool for 5 minutes before removing from the mold.
Sous Vide Method:
- Preheat sous vide water bath to 172°F (78°C).
- Blend ingredients until smooth.
- Grease small mason jars, then pour in the mixture.
- Sous vide for 60 minutes, then let cool before serving.

- Full-fat cottage cheese makes the bites extra creamy.
- Blend the mixture well for a smooth texture.
