  • 1 pound cod fillets
  • 2 cups baby potatoes, halved
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 teaspoons fresh rosemary, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, boil salted water; add halved baby potatoes and cook for about 15 minutes until fork-tender. Drain.
  2. Season cod fillets with salt and pepper. In a skillet, heat olive oil over medium heat; cook cod for 3-4 minutes on each side until flaky. Remove from skillet.
  3. In the same skillet, melt butter, add minced garlic, and sauté briefly. Stir in heavy cream and chicken broth; bring to simmer.
  4. Add rosemary and lemon juice; simmer for 4-5 minutes until slightly thickened.
  5. Gently fold in cooked potatoes, nestle cod into sauce, spoon sauce over fish, and heat for another 2 minutes.
  6. Serve garnished with fresh parsley.
